Improved options for selecting items for pickup

- We should be able to mark an item as picked up without having to take payment/deposit for it. The option to do this should be able to be toggled on a user or role basis. This is much better than making a note "customer took on XX/XX date"
- Deposit payment allocation is weird. Per CL support it appears to be allocated uniformly across an order. Would prefer for the deposit to be "consumed" as items are selected for pickup. That would make any amount needing to be tendered more easy to understand, and better link value of product taken with payment received.
These two things should work together to help us manage complex transactions.

Often is the case for us that an item is collected or installed while the order is still open, and we invoice when the everything is complete. This would be very helpful in managing the status of an order.
