We need the ability to remove the "Not Assigned" option for mechanics in the booking system.

Our process requires that we always assign a mechanic at the point of booking a job onto the calendar. Currently, if a mechanic is not clicked and assigned immediately, the system defaults the job to "Not Assigned" and it gets missed.
